Directions
- In a large bowl, combine diced vegetables & shrimp
- Gently toss in cilantro, lime juice, crushed red pepper flakes, olive oil & season with salt and pepper to taste
- Cover & refrigerate prior to serving
- Serve with tortilla or veggie chips. Enjoy!
Ingredients
- 1 Avocado (diced)
- 2 tablespoons Cilantro (finely chopped)
- 1 1/2 cup chopped Cooked shrimp – about 15 large shrimp (chopped)
- 1 teaspoon Crushed red pepper flakes
- 1 Lime (juiced)
- 2 Persian cucumbers (diced)
- 1/3 cup Red bell pepper (diced)
- 1/4 cup Red onion (finely sliced)
- A sprinkle of Salt & pepper to taste
- 1 tablespoon Urban Meadow olive oil
