- Whisk together olive oil, mint, white wine vinegar, honey, salt, and pepper
- Toss greens and chopped melon with olive oil mixture, and top with prosciutto, fresh mozzarella, and chopped pistachios

- 2-Jan ea honeydew melon; peeled, seeded, and coarsely chopped
- 1 ea prosciutto, 4oz
- 1 ea Urban Meadow® fresh mozzarella ball
- 1/2 cup ea pistachios, coarsely chopped
