Sweet Potato Brie Crostini – Urban Meadow

Directions
- Preheat your oven to 400°F (200°C)
- Cut sweet potato into half-inch thick round slices. Drizzle sweet potato with olive oil, salt and pepper, toss evenly to coat. Place sweet potato rounds on a baking sheet
- Bake for about 20-25 minutes or until the sweet potatoes are tender and slightly crispy at the edges
- Place a small piece of Brie on each round, allowing the residual heat to melt it slightly. Sprinkle dried cranberries and chopped walnuts over the Brie
- Return the baking sheet to the oven for an additional 5-7 minutes, or until the Brie is melted, and the toppings are warmed through
- Drizzle honey over the sweet potato rounds for a touch of sweetness
- Garnish with fresh rosemary for a pop of color and added flavor. Serve sweet potato rounds warm as a delightful appetizer or side dish
