Teriyaki Salmon – Urban Meadow

Directions
- In a small bowl, combine the teriyaki sauce, honey, soy sauce, grated ginger, and minced garlic to make the teriyaki sauce
- Place the salmon fillets in a shallow dish and pour half of the teriyaki sauce over them. Allow the salmon to marinate for 15-30 minutes
- While the salmon is marinating, prepare your rice according to the package instructions
- Heat oil in a skillet over medium-high. Add marinated salmon, skin side down, and cook 3–4 min per side or until desired doneness. Baste with teriyaki sauce while cooking
- Divide the cooked rice between two bowls. Top each bowl with fresh spinach leaves, avocado slices, and the teriyaki salmon fillets
- Garnish with sesame seeds and sliced green onions if desired

- 1/4 cup ea teriyaki sauce
- 1 tbsp ea Urban Meadow honey
- 1 tbsp ea Urban Meadow soy sauce
- 1 tsp ea grated fresh ginger
- 1 ea clove garlic, minced
- 1tbsp ea Urban Meadow vegetable oil
- 2 cups ea cooked Urban Meadow jasmine rice
- 1 ea ripe avocado, sliced
- 2 cups ea fresh spinach leaves
- Sesame seeds ea for garnish (optional)
- Sliced green onions ea for garnish (optional)
