Shrimp Tacos With Pineapple Salsa - Skinnygirl

Directions

  1. Combine ½ cup Skinnygirl Poppyseed Dressing, 1 tablespoon lime juice and Sriracha. Toss half of the mixture with the shrimp. Reserve remaining Dressing mixture. Let shrimp marinate in the dressing mixture while making the salsa
  2. Combine pineapple, mango, papaya, red pepper and green onion. Stir in remaining 1 tablespoon Dressing, remaining lime juice and cilantro
  3. Spray nonstick skillet with cooking spray and heat over medium-high heat. Cook shrimp 6 minutes or until shrimp turn pink
  4. Serve shrimp and salsa in warmed tortillas, garnish with cilantro and drizzle with reserved Dressing mixture, if desired

  • 1/2 cup + 1 tbsp ea Skinnygirl Poppyseed Dressing, divided
  • 2 tbsp ea lime juice, divided
  • 1 tbsp ea Sriracha
  • 1 lb. ea large shrimp, peeled and deveined
  • 1 cup ea chopped pineapple
  • 1 cup ea chopped mango and/or papaya
  • 1/2 cup ea chopped red pepper
  • 3 ea green onions, chopped
  • 1 tbsp ea chopped cilantro
  • 8 ea taco size flour or corn tortillas
