Summer Quinoa Salad Bowl - Urban Meadow

Directions
- Bring 1 cup of water and quinoa to a boil over medium-high heat, then decrease to a gentle simmer until quinoa has absorbed water, about 10 minutes
- Place greens in a bowl then top with cooled quinoa, peaches, corn, tomatoes, avocado, and cucumber, salt and pepper
- Top with a drizzle of dressing and enjoy!
Ingredients
- 2 cups ea arugula
- 1/2 cup ea Urban Meadow quinoa
- 1 ea peach, sliced
- 1/3 cup ea Urban Meadow canned sweet corn kernels
- 1/2 cup ea grape tomatoes
- 1/3 cup ea cucumbers, sliced
- Half ea avocado, sliced
- 2 tbsp ea Urban Meadow Italian dressing, to taste
- Urban Meadow salt and black pepper, ea to taste
