Directions

  1. Preheat oven to 350°F. Using a basking brush, brush each section of a muffin tray with olive oil
  2. Peel each zucchini into long strips. Line each muffin cup with 2 zucchini strips. Crack 1 egg into each muffin cup. Top with chopped tomato, chives, salt and pepper
  3. Bake for 20 minutes or until egg whites are cooked. Remove from oven and enjoy!

  • 2 ea large zucchinis
  • 12 ea large eggs
  • 1 ea large tomato, chopped
  • 1/4 cup ea Urban Meadow olive oil
  • 3 tbsp ea chives, finely chopped
  • Urban Meadow salt and pepper, ea to taste
