Directions

  1. Toast quinoa in a pan over medium heat. Stir constantly until golden brown
  2. Melt chocolate chips. Stir in coconut flakes, puffed quinoa and protein powder until smooth
  3. Use a small ice cream scoop to scoop 12 mounds of the mixture and place on parchment lined baking sheet. Top each mound with a slice of strawberry
  4. Place in fridge or freezer for 30 minutes or until hardened and ready to eat. Enjoy!

  • 3 oz. ea Urban Meadow chocolate chips
  • 2 ea large strawberries, sliced
  • 1/2 cup ea Urban Meadow coconut flakes
  • 2 tbsp ea protein powder
