Chicken, Caramelized Onions, and Cheese Quesadillas - Urban Meadow

Directions
- Heat 1 tablespoon of oil until hot in a wide skillet over medium heat. Add onions stirring occasionally until golden brown. Remove and set aside
- Season chicken with salt, pepper and garlic. In the same skillet, add remaining oil, add chicken in a single layer and cook for about 4 to 5 minutes on each side or until lightly browned. Remove from pan and allow to cool. Chop and set aside
- Melt butter. Lay tortilla flat on pan and sprinkle 1/4 of cheese on top, chicken, onions, and sprinkle cheese. Once cheese begins to melt, cover with second tortilla. Cook until tortilla is crisp and golden. Flip and cook until cheese is melted. Repeat
- Cut each quesadilla into fours and serve immediately. Top with sour cream and salsa, if desired!

- 1/2 lb. ea (two 4-ounces each) boneless, skinless chicken breast
- 1 tsp ea Urban Meadow salt and pepper
- 1/4 cup ea Urban Meadow canola oil
- 1 tsp ea garlic powder
- 4 ea 9-inch flour tortillas
- 1 tbsp ea Urban Meadow salted butter
- 2 cups ea Urban Meadow Mexican cheese, shredded
- 1 ea large sweet onion, peeled and sliced thinly
- Sour cream, ea optional
- Salsa, ea optional
