Caramelized Onion Mashed Potatoes - Urban Meadow

Directions
- Peel potatoes and cut into equal pieces. Add to a large pot of cold water, sprinkle with salt and bring to a boil on medium high heat. Once boiled, lower to medium heat and cook for 15-20 minutes, until fork tender
- In a pan, add 2 tbsp and sliced onions. Cook for 20-30 minutes on low heat stirring frequently
- Once cooked, strain potatoes and mash while still hot in the same pot. Add butter, milk and garlic powder and continue to mix until butter is melted, and everything is well combined. Fold in caramelized onions and add salt and pepper to taste
- If using, garnish with fresh thyme, and serve warm

- 1 large yellow onion

- 8 tbsp Urban Meadow salted butter (divided)
- 2 tbsp coconut milk
- 1 tsp garlic powder
- 1/2 tsp Urban Meadow salt and pepper, to taste
- 1 tsp fresh thyme, optional
