Beets with Burrata and Hot Honey - Urban Meadow

Directions
- Preheat oven to 400°F. Toss beets in olive oil, salt, and pepper, then roast for 30-40 minutes until tender
- Heat honey and red pepper flakes in a small saucepan over medium heat for 3-4 minutes. Let cool slightly
- Arrange roasted beets on a platter, top with burrata, drizzle with hot honey, and garnish with pomegranate seeds, thyme, basil, and crushed red pepper flakes. Enjoy!

- 2 ea medium red beets, peeled and sliced
- 2 ea medium orange beets, peeled and sliced
- 2 tbsp ea Urban Meadow olive oil
- Urban Meadow salt and pepper, ea to taste
- 1/2 cup ea Urban Meadow honey
- 1 tbsp ea red pepper flakes
- 2 tbsp ea pomegranate seeds
- Fresh thyme and basil, ea for garnish
- Crushed red pepper flakes, ea for garnish (optional)
