- In a large bowl, combine the romaine, red onion, feta, chickpeas, Kalamata olives, cherry tomatoes, and cucumber. Toss gently to combine
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, black pepper, and oregano
- Pour the vinaigrette over the salad and toss to coat evenly

- 4 cups ea romaine lettuce, chopped
- 1/2 of ea red onion, thinly sliced
- 1/2 cup ea feta cheese, crumbled
- 1 can ea Urban Meadow chickpeas, drained and rinsed
- 1/2 cup ea kalamata olives, pitted and sliced
- 1 cup ea cherry tomatoes, halved
- 1 ea cucumber, sliced
