Directions

  1. Using a vegetable peeler, peel the carrots into long, thin ribbons
  2. In a small bowl, whisk together sesame oil, rice wine vinegar, soy sauce, honey, crushed red pepper flakes, grated ginger, and minced garlic. Adjust the sweetness and spice level to your liking
  3. In a large bowl, combine the carrot ribbons. Pour the dressing over the carrots and toss gently to coat them evenly
  4. Sprinkle toasted sesame seeds, chopped green onions, and cilantro, stir to combine. Serve immediately for a fresh crunch, or let it chill for 15 minutes to marinate the flavors. Enjoy!
