Directions

  1. In a large bowl, combine the drained corn and black beans. Add the chopped red onion, jalapeño, cilantro, and lime juice. Mix to combine evenly
  2. Gently fold in the diced avocado. Drizzle with olive oil and season with salt and pepper to taste
  3. Chill for 10–15 minutes to let the flavors meld or serve immediately
  4. Serve as a dip with tortilla chips or as a topping for tacos, grilled chicken, or fish. Enjoy fresh!

  • 1 can ea Urban Meadow corn, drained
  • 1 can ea (15.5 oz) Urban Meadow black beans
  • 1 ea ripe avocado, diced
  • 1 ea small red onion, finely chopped
  • 1 ea jalapeño, seeded and minced (use 2 for extra heat)
  • 1/4 cup ea fresh cilantro, chopped
  • 2 tbsp ea lime juice
  • 1 tbsp ea Urban Meadow olive oil
  • Urban Meadow salt and pepper ea to taste
