Chicken Fried Rice - Urban Meadow

Directions
- Cook 3 cups of rice according to package directions and set aside.
- Heat 2–3 tbsp oil in a large skillet over medium heat.
- Add chicken, season with salt and pepper, and cook 8–10 minutes until fully cooked and lightly browned.
- Add frozen vegetables and sauté 4–5 minutes until heated through.
- Optional: push chicken and vegetables to one side of the skillet, crack 4 eggs on the empty side, scramble until cooked, then mix everything together.
- Add cooked rice to the skillet, drizzle 4–5 tbsp soy sauce over the top, and stir to combine.
- Taste and adjust seasoning if needed, then serve hot.

- 2 lbs Boneless chicken breast or thigh, cut into bite-sized pieces

- 4–5 tbsp Urban Meadow Soy Sauce
- 2–3 tbsp Urban Meadow Olive Oil
- 4 Urban Meadow Large eggs
- Salt and pepper, to taste
