Preheat the oven to 425°F and line a baking sheet with parchment paper. Add the Smiles and bake, flipping once, until golden and crispy, about 12 to 16 minutes.
Top half of the Smiles with a piece of cheese, then cover with remaining Smiles. Return to the oven and bake until cheese is melted, about 1 minute.
Serve soup in bowls with garnishes, if using, alongside grilled cheese Smiles.
