Directions

  1. Preheat the oven to 425 degrees F
  2. Crack eggs into a bowl, being careful to keep the yolks intact
  3. Place avocado halves in a baking dish so they don’t tip. Spoon 1 egg yolk, then egg white, into each hole. Repeat for all avocados. Season with chives, parsley, salt, and pepper
  4. Gently place baking dish in the preheated oven and bake until eggs are cooked, about 15 minutes. Sprinkle bacon on the avocado and enjoy!

  • 1 ea avocado, halved and pitted
  • 2 tsp ea chopped fresh chives
  • 1 pinch ea dried parsley
  • 1 pinch ea sea salt and ground pepper
