Summer Grilled Shrimp - Urban Meadow®

Directions
- Mix olive oil, maple seasoning, and lemon juice in a glass bowl. Put the shrimp in the bowl and coat with the mixture. Refrigerate until ready to grill
- Whisk olive oil, honey, lime juice, cilantro, balsamic vinegar, salt, and pepper together in a small bowl. Set vinaigrette aside
- Preheat a grill to medium-high heat. Stick the shrimp onto skewers. Grill until shrimp turn pink and opaque, about 2 minutes per side. Remove from skewers and set aside
- Place mixed greens in bottom of large salad bowl as a base. Add cucumber, corn, tomato, red onion, and avocado in sections on top of the greens. Pile the grilled shrimp in the center of the salad. Drizzle with vinaigrette and toss to coat

- 12 oz ea peeled and deveined shrimp
- 1/4 cup ea Urban Meadow extra-virgin olive oil
- 2 tbsp ea Urban Meadow honey
- 2 tbsp ea fresh lime juice
- 2 tbsp ea chopped cilantro
- 1 tbsp ea balsamic vinegar
- to taste ea Urban Meadow salt and ground black pepper
- 4 cups ea mixed salad greens
- 1/2 cup ea thinly sliced English cucumber
- 1/3 cup ea freshly cooked corn
- 1/2 cup ea diced tomato
- 1/4 cup ea sliced red onion
- 1 ea avocado, diced
