Directions
- Combine the chickpeas, tahini, beet, lemon juice, garlic, cumin, and salt in a food processor
- While processing, slowly drizzle in the olive oil and blend until smooth
- Serve in a bowl and sprinkle with desired toppings

- 4-Feb ea roasted beets, peeled & chopped
- 1 can ea Urban Meadow® chickpeas, drained
- 2/3 cup ea tahini
- 1/3 cup ea Urban Meadow® lemon juice
- 2 cloves ea garlic, chopped
- 1/3 cup ea Urban Meadow® olive oil
- 1 teaspoon ea cumin
- 1 teaspoon ea kosher salt
- 1 handful chopped ea herbs
- Optional Toppings: ea Parsley, pine nuts, lemon zest, and thinly sliced radishes
