Urban Meadow - Carrot Salad

Directions
- Using a vegetable peeler, peel the carrots into long, thin ribbons
- In a small bowl, whisk together sesame oil, rice wine vinegar, soy sauce, honey, crushed red pepper flakes, grated ginger, and minced garlic. Adjust the sweetness and spice level to your liking
- In a large bowl, combine the carrot ribbons. Pour the dressing over the carrots and toss gently to coat them evenly
- Sprinkle toasted sesame seeds, chopped green onions, and cilantro, stir to combine. Serve immediately for a fresh crunch, or let it chill for 15 minutes to marinate the flavors. Enjoy!
