Directions

  1. Blend all vinaigrette ingredients together in a food processor or blender until well combined. Set aside
  2. Combine all salad ingredients. Add optional ingredients, as desired. Toss with dressing

  • 1/2 cup extra virgin olive oil, for sun-dried tomato vinaigrette
  • 1/4 cup red wine vinegar, for sun-dried tomato vinaigrette
  • 2 tsp spicy brown mustard, for sun-dried tomato vinaigrette
  • 1/3 cup sun-dried tomatoes in oil, for sun-dried tomato vinaigrette
  • 1 tsp garlic, minced, for sun-dried tomato vinaigrette
  • 2 tsp honey, for sun-dried tomato vinaigrette
  • 1 tbsp fresh oregano, for sun-dried tomato vinaigrette
  • 1 tsp salt, for sun-dried tomato vinaigrette
  • 1/4 tsp black pepper, for sun-dried tomato vinaigrette
  • 1 can (16 oz) Bush’s® Chick Peas, drained and rinsed
  • 1 can (15.5 oz) Bush’s® Cannellini Beans, drained and rinsed
  • 1 can (16 oz) Bush’s® Light Red Kidney Beans, drained and rinsed
  • 1 cucumber, seeded and diced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup red pepper, diced
  • 1/2 cup red onion, diced
  • 1/4 cup pepperoncini, sliced
  • 4 oz. fresh mozzarella pearls
  • 1/4 cup basil, cut into thin strips (chiffonade)
  • 1 recipe sun-dried tomato vinaigrette
  • 2 oz. pepperoni, diced (optional)
  • 2 oz. Italian dry salami, diced (optional)
