Directions

  1. In a large bowl, combine diced vegetables & shrimp
  2. Gently toss in cilantro, lime juice, crushed red pepper flakes, olive oil & season with salt and pepper to taste
  3. Cover & refrigerate prior to serving
  4. Serve with tortilla or veggie chips. Enjoy!

Ingredients

  • 1 Avocado (diced)
  • 2 tablespoons Cilantro (finely chopped)
  • 1 1/2 cup chopped Cooked shrimp – about 15 large shrimp (chopped)
  • 1 teaspoon Crushed red pepper flakes
  • 1 Lime (juiced)
  • 2 Persian cucumbers (diced)
  • 1/3 cup Red bell pepper (diced)
  • 1/4 cup Red onion (finely sliced)
  • A sprinkle of Salt & pepper to taste
  • 1 tablespoon Urban Meadow olive oil
