Directions
- Melt butter and olive oil in a large skillet over medium heat. Cook onion until lightly browned, about 8 minutes. Add in potatoes and carrot; stirring occasionally, until tender, about 15 minutes
- Add in corned beef, parsley, pepper, thyme, and salt. Cook, stirring often, until hash is crisp and browned, 10 to 15 more minutes

- 2 tbsp Urban Meadow butter
- 2 tbsp Urban Meadow extra-virgin olive oil
- 1 Large, chopped onion
- 5 Large Yukon Gold potatoes, peeled and cut into 1/4-inch cubes
- 1 Shredded carrot
- 2 lbs Cooked corned beef, cubed
- 2 tbsp Fresh chopped parsley
- 1/2 tsp Ground black pepper, to taste
- 1/4 tsp Dried thyme leaves
- 1 Pinch of Urban Meadow salt, to taste
