Directions

  1. Blend all vinaigrette ingredients together in a food processor or blender until well combined. Set aside
  2. Combine all salad ingredients. Add optional ingredients, as desired. Toss with dressing

  • 1/2 cup ea extra virgin olive oil, for sun-dried tomato vinaigrette
  • 1/4 cup ea red wine vinegar, for sun-dried tomato vinaigrette
  • 2 tsp ea spicy brown mustard, for sun-dried tomato vinaigrette
  • 1/3 cup ea sun-dried tomatoes in oil, for sun-dried tomato vinaigrette
  • 1 tsp ea garlic, minced, for sun-dried tomato vinaigrette
  • 2 tsp ea honey, for sun-dried tomato vinaigrette
  • 1 tbsp ea fresh oregano, for sun-dried tomato vinaigrette
  • 1 tsp ea salt, for sun-dried tomato vinaigrette
  • 1/4 tsp ea black pepper, for sun-dried tomato vinaigrette
  • 1 can ea (16 oz) Bush’s® Chick Peas, drained and rinsed
  • 1 can ea (15.5 oz) Bush’s® Cannellini Beans, drained and rinsed
  • 1 can ea (16 oz) Bush’s® Light Red Kidney Beans, drained and rinsed
  • 1 ea cucumber, seeded and diced
  • 1/2 cup ea Kalamata olives, pitted and halved
  • 1/2 cup ea red pepper, diced
  • 1/2 cup ea red onion, diced
  • 1/4 cup ea pepperoncini, sliced
  • 4 oz. ea fresh mozzarella pearls
  • 1/4 cup ea basil, cut into thin strips (chiffonade)
  • 1 ea recipe sun-dried tomato vinaigrette
  • 2 oz. pepperoni, diced ea (optional)
  • 2 oz. Italian dry salami, diced ea (optional)
