Cookies and Cream Ice Cream Sandwich - Stone Ridge Creamery

Directions
- For the Cookies: Preheat oven to 350° F
- Using a hand mixer with a large bowl or stand mixer, cream together butter, brown sugar, granulated sugar and vanilla
- Add eggs, 1 at a time, beating well after each addition
- Gradually add flour, salt and baking soda. Mix to combine
- Fold in chocolate chips until evenly distributed throughout the batter
- Scoop 2 1/2 tablespoons of batter and form into a ball. Place on a parchment lined baking sheet
- Bake for 12-14 minutes or until golden brown. Allow cookies to cool
- Place a large scoop, about 1/3 cup of Stoneridge Creamery Cookies and Cream Ice Cream onto one of the cookies and top with a second cookie
- Sandwiches can be wrapped in parchment paper and stored in the freezer for up to 3 months
