Upside Down Mini Blueberry Cakes - Urban Meadow

Directions
- Preheat oven to 350 degrees F
- Fill each section of a greased cupcake pan with ¼ cup of blueberries, topping with 1 tsp of brown sugar, and 1 tbsp of walnuts
- To a large bowl, combine cake mix and vanilla cream soda, and mix until smooth
- Using an ice cream scoop, pour 1 scoop of cake and soda mix into each section of pan
- Bake for 25 minutes, then remove from oven and let cool for 5 minutes
- Cover with a cutting board and flip over to remove mini blueberry cakes
- Sprinkle powdered sugar and a dollop of whipped topping, and serve!

- 1/4 cup Urban Meadow brown sugar
- 1 box yellow cake mix
- 1 can vanilla cream soda
- 1/2 cup powdered sugar
- 1 can Urban Meadow whipped topping
