Directions

  1. Preheat oven to 350°F (175°C)
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into a 9-inch pie dish to form a crust
  3. Bake crust for 8–10 minutes until golden. Let cool slightly
  4. In another bowl, whisk together sweetened condensed milk, egg yolks, lime juice, and zest until smooth
  5. Pour filling into the crust and bake for 12–15 minutes, or until just set (center should jiggle slightly)
  6. Cool pie to room temperature, then refrigerate for at least 2 hours (preferably 4) until fully chilled
  7. For the topping, beat heavy cream and powdered sugar until soft peaks form
  8. Serve chilled, topped with whipped cream and lime garnish

  • 1 1/2 cups graham cracker crumbs

  • 6 tbsp Urban Meadow unsalted butter
  • 1 can Urban Meadow sweetened condensed milk
  • 4 Urban Meadow large eggs (yolks)
  • 1/2 cup fresh lime juice (about 12–15 limes)
  • 1 cup Urban Meadow heavy whipping cream
  • 2 tbsp Urban Meadow powdered sugar
  • 1 Lime slice or zest, for garnish
