Directions
- Preheat oven to 375°F. Line a muffin pan with paper liners or lightly grease
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt
- In a separate bowl, mix oil, milk, egg, and vanilla until well combined
- Pour wet ingredients into the dry ingredients and stir just until combined don’t overmix
- Gently fold in the shredded coconut
- Divide the batter evenly into the 12 muffin cups
- In a small bowl, mix brown sugar and cinnamon, then sprinkle over each muffin for a sweet, spiced top
- Bake for 18–20 minutes, or until the tops are golden and a toothpick comes out clean
