Cheesy Hasselback Potatoes - Diamond Crystal Salt

Directions
- Preheat oven to 450°F and line a baking sheet with foil
- Place each potato between two wooden spoons or chopsticks and carefully make cuts every 1/8-inch without cutting all the way through the potato
- Place the potatoes on the baking sheet. Add melted butter to a bowl along with Diamond Crystal Kosher Salt, garlic powder, black pepper, and any other seasoning you desire. Brush each potato with the butter mixture and be sure to get in-between the slices
- Bake the potatoes for 1 hour or until tender. Remove them from the oven and carefully insert the cheese slices into each cut of the potato. Return them to the oven and continue baking until the cheese is melted, about 3 minutes
- Remove the potatoes from the oven, garnish with cilantro, and serve immediately
