Directions
- Spiralize the zucchini, then toss with Diamond Crystal Kosher Salt and place in a colander to allow the moisture to drain out
- In a large pan over medium heat, add the vegetable oil, then add the white parts of the scallions, and minced garlic, and sauté until fragrant for about 1 minute
- Next add the soy sauce, chili paste, brown sugar, chili garlic sauce, sesame oil, cornstarch, and water. Mix until combined and continue stirring as the sauce begins to thicken
- Add the zucchini noodles and carefully toss to combine, cooking for only about one minute or so until hot and the zucchini is cooked to your desired doneness
- Serve and garnish with scallion greens and sesame seeds
