Shrimp and Peanut Butter Noodles - Urban Meadow®

Directions
- Mix together peanut butter, soy sauce, black vinegar, sugar, and sesame oil in a small bowl until sauce is well combined
- Boil water in a large pot. Add udon noodles and cook 5 min. Add shrimp; cook 3 min until pink. Turn off heat, stir in broccoli, cover, and let sit 2–3 min
- Drain noodle mixture and transfer to a large serving bowl. Mix sauce in, covering the noodles evenly. Sprinkle peanuts and serve

- 1 tbsp ea sesame oil
- 10 oz ea Japanese udon noodles
- 20 ea uncooked large shrimp - peeled, deveined, tails left intact
- 1 cup ea Urban Meadow® - Broccoli Florets
- 1/4 cup ea Urban Meadow® - roasted peanuts, chopped (optional)
