Sheet Pan Chicken and Veggies - Urban Meadow

Directions
- Preheat oven to 425 degrees F
- In a large bowl, squeeze 2 and add thyme, minced garlic, salt and pepper to taste, and olive oil to use as marinade
- Coat chicken in mixture and let marinate for 15 minutes
- Cut potatoes in halves
- Coat potatoes, asparagus and tomatoes in marinade mixture
- Place chicken, potatoes, asparagus and tomatoes on a large baking sheet
- Top with salt and pepper to taste
- Bake in oven for 30 minutes or until chicken is cooked through and edges of vegetables are golden brown. Once cooked, remove from oven and sprinkle with fresh thyme. Plate and serve. Enjoy!

- 1 ea (1.5 lb) pkg Urban Meadow boneless chicken breasts
- 1 ea (1 lb) bag mini potatoes, halved
- 1 lb. ea bunch asparagus, trimmed
- 1 cup ea grape tomatoes
- 2 ea lemons
- 1 1/2 tsp ea fresh thyme
- 3 tbsp ea Urban Meadow olive oil
- 2 tbsp ea garlic, minced
- Urban Meadow salt and pepper, ea to taste
