Grilled Shrimp with White Beans - Urban Meadow

Directions
- Preheat your grill or grill pan to medium-high heat
- Toss shrimp in 2 tbsp olive oil, garlic, salt, black pepper, and optional crushed red pepper flakes
- Grill shrimp for 2-3 minutes per side until pink and cooked through
- In a small pot, heat the cannellini beans with remaining olive oil, lemon juice and a pinch of salt for 3-4 minutes
- Plate the beans, top with grilled shrimp, and sprinkle with fresh parsley
- Serve with lemon wedges on the side. Enjoy!

- 1 lb. ea shrimp, peeled and deveined
- 5 tbsp ea Urban Meadow extra virgin olive oil, divided
- 4 ea garlic cloves, finely chopped
- 1/2 tsp ea each Urban Meadow salt & pepper
- 2 ea (15 oz) cans Urban Meadow cannellini beans
- 1/4 cup ea fresh parsley, chopped
- 1 ea lemon, cut into wedges
- 1 tbsp ea lemon juice
- Crushed red pepper flakes, ea for garnish (optional)
