Shrimp Scampi - Urban Meadow

Directions
- Cook pasta according to package instructions, then drain, reserving 1/2 cup pasta water
- Cook shrimp in a large skillet with olive oil and 2 tbsp butter over medium-high heat. Season with salt and pepper, cook 2-3 minutes per side, then remove shrimp from the pan
- In the same skillet, melt the remaining butter, sauté garlic and red pepper flakes for 1-2 minutes. Add wine (or broth), simmer for an additional 2 to 3 minutes
- Add shrimp back to the skillet, toss with cooked pasta, lemon juice, and parsley. Add reserved pasta water if needed for sauce. Season to taste. Serve with lemon wedges and extra parsley. Enjoy!

- 1 lb. ea Urban Meadow shrimp, peeled and deveined
- 8 oz. ea linguine or spaghetti of choice
- 4 tbsp ea Urban Meadow unsalted butter
- 2 tbsp ea Urban Meadow olive oil
- 4 ea cloves garlic, minced
- 1/2 tsp ea red pepper flakes (optional)
- 1/2 cup ea dry white wine (or chicken broth)
- 2 tbsp ea Urban Meadow lemon juice
- 1/4 cup ea fresh parsley, chopped
- Urban Meadow salt and pepper, ea to taste
- Lemon wedges, ea for garnish
