Directions

  1. In a bowl, combine ground pork and beef, breadcrumbs, grated Parmesan, chopped parsley, egg, salt, and pepper. Mix until well combined. Shape the mixture into bite-size meatballs
  2. In a large pot, bring the chicken broth to a simmer over medium heat. Gently drop the meatballs into the simmering broth and cook for about 10 minutes, or until they are cooked through
  3. Add the small pasta to the broth and cook according to package instructions. In the last couple of minutes of cooking, stir in the chopped spinach until wilted. Serve hot and enjoy!

  • 1 lb ground pork and beef
  • 1/2 cup Urban Meadow breadcrumbs
  • 1/4 cup grated Urban Meadow Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 Urban Meadow large egg
  • Urban Meadow salt and pepper, to taste
  • 8 cups Urban Meadow chicken broth
  • 1 cup small pasta (such as acini de pepe or small pasta shells)
  • 4 cups Urban Meadow frozen spinach, chopped
