Directions

  1. Preheat the oven to 350°F. Spray an 8”×8” baking dish with cooking spray and set aside
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, lemon zest, and salt. Press the mixture firmly into the bottom of the prepared pan. Bake for 7-10 minutes, remove from oven and set aside to cool to room temperature
  3. To make the filling, combine the egg yolks and condensed milk in a medium bowl. Stir in the salt, lemon juice and zest. Stir until mixture is smooth. Fold in the blueberries
  4. Pour the filling evenly over the cooled crust. Bake for approximately 15 minutes, or until set
  5. Allow the pan to come to room temperature. Chill in the refrigerator until cold before cutting into even bars, at least 2 hours. Dust lightly with confectioners’ sugar prior to serving

  • 1 (14 oz) can ea Urban Meadow® sweetened condensed milk
  • 1/2 cup ea freshly squeezed lemon juice (about 4 lemons)
  • 1 tsp ea lemon zest, divided
  • 1 pinch ea Urban Meadow® salt, divided
  • 1 cup ea fresh blueberries
  • optional ea confectioners’ sugar
