Directions

  1. In a large bowl, combine the ricotta, heavy cream, lemon zest, lemon juice, and sugar, and mix until the ricotta is light and fluffy
  2. Brush both sides of the bread with olive oil. Toast the bread until golden on each side, then cut in half
  3. Spread the ricotta on one side of the toast, drizzle with honey, and top with arugula, 1 slice of prosciutto, figs and walnuts

  • 1/4 cup Urban Meadow® heavy cream
  • 1/2 tsp lemon zest
  • 1 1/2 tsp Urban Meadow® lemon juice
  • 1 tsp Urban Meadow® sugar
  • 8 slices sourdough bread
  • 1/4 cup Urban Meadow® olive oil
  • 1/4 cup Urban Meadow® honey
  • to taste fresh arugula
  • to taste fresh figs, sliced
  • 4-6 slices prosciutto
  • 1/2 cup toasted walnuts, chopped
