  1. Whisk together olive oil, mint, white wine vinegar, honey, salt, and pepper
  2. Toss greens and chopped melon with olive oil mixture, and top with prosciutto, fresh mozzarella, and chopped pistachios

  • 2-Jan ea honeydew melon; peeled, seeded, and coarsely chopped
  • 1 ea prosciutto, 4oz
