Directions
- Have all your ingredients prepared. In a small bowl, stir chicken with sweet chili sauce. Fill a pie plate with warm water. Lay a damp smooth kitchen towel on the counter. Thinly cut peach halves into slices or use peach slices
- Dip one rice paper wrap in warm water until just pliable, 20–40 sec, then place on a towel. Add ½ lettuce leaf, 2 peach slices, ⅛ of the chicken, cucumber, and red pepper, plus 2–3 mint leaves near the bottom
- Fold the bottom edge over filling, fold in sides, then roll tightly. Set seam-side down. Repeat with remaining ingredients. Leave whole for lunch or slice diagonally for appetizers. Serve with sweet chili sauce. Cover with a damp towel if storing

- 1 1/4 cups Cooked Chicken, cut into strips
- 1 Cucumber, julienne strip 3 inches
- 4 leaves Lettuce, Boston or leafy
- 8-12 leaves Mint Leaves
- 1/2 Red Pepper, julienne strips
- 8 wraps Rice Paper, round wraps
- 3 tablespoons Thai Sweet Chili Sauce
- 1/4 cup Thai Sweet Chili Sauce, for dipping
- 1 can Urban Meadow® Peaches, halves or slices in fruit juice, patted dry
