Directions

  1. Bring 1 cup of water and quinoa to a boil over medium-high heat, then decrease to a gentle simmer until quinoa has absorbed water, about 10 minutes
  2. Place greens in a bowl then top with cooled quinoa, peaches, corn, tomatoes, avocado, and cucumber, salt and pepper
  3. Top with a drizzle of dressing and enjoy!

Ingredients

  • 2 cups arugula
  • 1/2 cup Urban Meadow quinoa
  • 1 peach, sliced
  • 1/3 cup Urban Meadow canned sweet corn kernels
  • 1/2 cup grape tomatoes
  • 1/3 cup cucumbers, sliced
  • Half avocado, sliced
  • 2 tbsp Urban Meadow Italian dressing, to taste
  • Urban Meadow salt and black pepper, to taste
