Chicken Fried Rice - Urban Meadow

Directions

  1. Cook 3 cups of rice according to package directions and set aside.
  2. Heat 2–3 tbsp oil in a large skillet over medium heat.
  3. Add chicken, season with salt and pepper, and cook 8–10 minutes until fully cooked and lightly browned.
  4. Add frozen vegetables and sauté 4–5 minutes until heated through.
  5. Optional: push chicken and vegetables to one side of the skillet, crack 4 eggs on the empty side, scramble until cooked, then mix everything together.
  6. Add cooked rice to the skillet, drizzle 4–5 tbsp soy sauce over the top, and stir to combine.
  7. Taste and adjust seasoning if needed, then serve hot.

  • 3 cups Urban Meadow Long Grain Rice
  • 2 lbs Boneless chicken breast or thigh, cut into bite-sized pieces
  • 4 cups Urban Meadow Oriental Mix Frozen Vegetables
  • 4–5 tbsp Urban Meadow Soy Sauce
  • 2–3 tbsp Urban Meadow Olive Oil
  • 4 Urban Meadow Large eggs
  • Salt and pepper, to taste
