Directions
- Preheat the oven to 425 degrees F
- Crack eggs into a bowl, being careful to keep the yolks intact
- Place avocado halves in a baking dish so they don’t tip. Spoon 1 egg yolk, then egg white, into each hole. Repeat for all avocados. Season with chives, parsley, salt, and pepper
- Gently place baking dish in the preheated oven and bake until eggs are cooked, about 15 minutes. Sprinkle bacon on the avocado and enjoy!

- 1 ea avocado, halved and pitted
- 2 tsp ea chopped fresh chives
- 1 pinch ea dried parsley
- 1 pinch ea sea salt and ground pepper
