Directions
- In a large bowl, combine the drained corn and black beans. Add the chopped red onion, jalapeño, cilantro, and lime juice. Mix to combine evenly
- Gently fold in the diced avocado. Drizzle with olive oil and season with salt and pepper to taste
- Chill for 10–15 minutes to let the flavors meld or serve immediately
- Serve as a dip with tortilla chips or as a topping for tacos, grilled chicken, or fish. Enjoy fresh!

- 1 can ea Urban Meadow corn, drained
- 1 can ea (15.5 oz) Urban Meadow black beans
- 1 ea ripe avocado, diced
- 1 ea small red onion, finely chopped
- 1 ea jalapeño, seeded and minced (use 2 for extra heat)
- 1/4 cup ea fresh cilantro, chopped
- 2 tbsp ea lime juice
- 1 tbsp ea Urban Meadow olive oil
- Urban Meadow salt and pepper ea to taste
