Cauliflower Fried Rice - Urban Meadow

Directions
- Finely cut cauliflower florets and set aside
- In a skillet, add 1 tablespoon of sesame oil over medium heat. Add the eggs or tofu and stir until cooked then set aside. In the same skillet, add in the remaining sesame oil, onions, peas and carrots, and garlic. Cook until the veggies are fully cooked
- Add the cauliflower rice, soy sauce, black pepper, and the cooked eggs or tofu. Mix everything well to combine. Before serving, top with green onions and sesame seeds. Enjoy!
Ingredients
- 16 oz. ea Urban Meadow frozen cauliflower florets, defrosted
- 2 tbsp ea sesame oil
- 3 ea Urban Meadow eggs beaten, vegans substitute for 1 cup tofu
- 1/2 cup ea white onions, diced
- 2 cups ea Urban Meadow frozen peas and carrots
- 2 ea garlic cloves, minced
- 2 tbsp ea gluten-free soy sauce
- 1/2 tsp ea Urban Meadow black pepper, to taste
- 6 ea green onions, minced for garnishing
- Sesame seeds, ea optional
