Directions
- Cook quinoa according to package instructions. When done, pour into a serving bowl and set aside until room temperature
- While quinoa is cooling, in a small bowl, whisk vinegar, honey, olive oil, mustard, and garlic powder until combined to make a vinaigrette
- Combine apples, celery, green onions, walnuts, cranberries, salt and pepper to taste
- Pour vinaigrette over the salad and stir until combined then serve
Ingredients
- 1 cup Urban Meadow organic quinoa
- 1/2 cup celery, diced
- 2 green onions, sliced
- 1 granny smith apple, diced
- 1/3 cup walnuts, chopped
- 1/3 cup dried cranberries
- 2 tbsp apple cider vinegar
- 1 tbsp Urban Meadow honey
- 1 tbsp Urban Meadow olive oil
- 2 tsp Urban Meadow Dijon mustard
- 1/4 tsp garlic powder
- 1/2 tsp Urban Meadow salt and pepper, to taste
