Directions

  1. In a large bowl, combine the romaine, red onion, feta, chickpeas, Kalamata olives, cherry tomatoes, and cucumber. Toss gently to combine
  2. In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, black pepper, and oregano
  3. Pour the vinaigrette over the salad and toss to coat evenly

  • 1 can Urban Meadow chickpeas, drained and rinsed
  • 1/2 cup kalamata olives, pitted and sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
