Waffle Ice Cream Sandwich - Stone Ridge Creamery

Directions
- In a large bowl combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Mix to combine
- In a separate bowl whisk together the milk, melted butter, egg yolks and vanilla
- Add the milk mixture to the dry mix and stir until just combined
- In the bowl of a stand mixer or using an electric mixer whisk the egg whites until you have stiff peaks, about 2-3 minutes
- Add 1/3 of the whipped egg whites to the waffle batter and mix to combine. Once mixed, gently fold the remaining egg whites into the batter until just combined, being careful not to over mix
- Heat a waffle iron and cook the batter according to the manufacturer’s recommendations
- Allow the waffles to cool to room temperature. Scoop the ice cream onto one waffle and top with a second waffle
- Garnish with your choice of syrup and berries

- 1/4 cup ea unsalted butter, melted
- 2 ea large eggs, separated
- 2 tsp ea vanilla
- 3 to 4 ea scoops of Stoneridge Creamery Cookies and Cream Ice Cream
