Plant-based Mac-n-Cheese - Vitalite™

Directions
- In a large pan, sauté minced garlic in the olive oil until lightly browned
- Add flour and whisk together. Cook 1 minute more
- Slowly add the almond milk while whisking to avoid making lumps
- Transfer to a blender with the roasted garlic and puree until smooth
- Return to pan, add the nutritional yeast and cook until thickened and smooth
- Season with salt and pepper as needed, then add the cooked pasta noodles and mix well
- Transfer to a cast iron skillet, top with Vitalite™ Dairy-Free Mozzarella Style Shreds and place in oven to melt
- Remove from oven and garnish with parsley

- 1/2 cup ea Vitalite™ dairy-free mozzarella style shreds
- pinch ea Urban Meadow® salt
- pinch ea Urban Meadow® pepper
- to garnish ea fresh parsley
