Directions
- Heat oven to 450°F
- Heat olive oil in an oven-safe skillet over medium heat. Add in white onion and bell pepper & cook until onion is translucent & pepper is tender about 15-20 minutes
- Add in minced garlic & stir in cumin, paprika and cayenne pepper and cook for another minute
- Stir in tomatoes and crushed red pepper flakes and cook until sauce has thickened, about 10 minutes
- Carefully crack eggs into skillet over tomato sauce, Season with salt & pepper & top with crumbled feta
- Transfer skillet to oven and bake until eggs they are cooked to your liking
- Garnish with fresh cilantro & serve with crusty bread for dipping. Enjoy!

- A sprinkle of Cilantro
- 3 Cloves garlic, minced
- 1 cup Crumbled feta cheese
- 1 teaspoon Crushed red pepper flakes
- 4 Eggs
- A loaf of Fresh Italian bread
- ½ teaspoon Ground cayenne
- 1 teaspoon Ground cumin
- 1 teaspoon Ground paprika
- 1 large Red bell pepper, chopped
- A sprinkle of Salt & Pepper, to taste

- 1 large White onion, chopped
