Soft Pretzels - Urban Meadow®

Directions
- Preheat oven to 475°F
- In a small bowl, dissolve yeast and 1 teaspoon sugar in 1 ¼ cup warm water. Let stand until fully dissolved, about 10 minutes
- In a large bowl, mix together flour, remaining sugar, and salt - then add the oil and yeast mixture. Mix and form into a dough, and knead until smooth
- Lightly oil a large bowl, and place dough to rest. Cover with a damp kitchen towel and let rise in a warm place until doubled in size, about 1 hour
- In a cast iron or other (non-aluminum) pan, heat water and baking soda *careful not to boil*
- After dough rises, divide into 12 pieces. Roll into ropes and twist into pretzels. Dip each in solution 1 min, turning halfway. Place on greased sheets and sprinkle with salt or cinnamon sugar
- Bake about 5 minutes, or until golden brown. Serve & enjoy!

- 5 cups ea Urban Meadow® All-Purpose Flour
- 1/2 cup and 1 teaspoon ea Urban Meadow® Granulated Sugar, separated
- 1 1/2 teaspoons ea Urban Meadow® Salt
- 1 tablespoon ea Urban Meadow® Vegetable Oil
- 1/2 cup ea baking soda
- 4 cups ea hot water
- 1/4 cup ea kosher salt for topping (optional)
- 1/4 cup ea cinnamon-sugar mixture for topping (optional)
